The Ritz-Carlton Hong Kong is now collaborating with the king of Champagne, Dom Pérignon to craft a Bubbly tasting menu at the Chef’s Table on the 102th Floor, the highest in the world.
This menu is the work of the hotel’s Executive Chef, Peter Find and the Chef de Cave of  Dom Pérignon, Richard Geoffroy with a five-course culinary experience pairing with three exceptional vintage of Dom Pérignon. Richard experienced all the pairing in person when he was visiting Hong Kong earlier and shared his thoughts with Peter for completing this exceptional menu.

The three Dom Pérignon in the menu includes: Vintage 2003, Oenothèque 1996 and the Rosé Vintage 2002. The Oenothèque 1996 is the re-release of Vintage 1996 with longer aging in bottle being disgorged lately upon release. The Rosé Vintage 2002 is released in small quantity with this exceptional vintages being sought after. All the dishes are of exceptional presentation and perfectly paired with these fabulous champagnes.
