紐約與香港,這兩個城市有什麼共通之處?兩地同為國際金融中心,同樣是高樓林立的鋼筋森林,也同樣是各樣文化、信仰和生活方式都能包容並濟的自由城市。身處歷史的洪流總會歷經波瀾,幸而狄更斯筆下那個那個灰暗的時代早已是過去,愛與寬容化解了倫敦和巴黎循環不盡的悲劇。而St. Regis 的調酒師,則發揮巧妙的創意,用原創的雞尾酒續寫新的雙城故事,描述著紐約和香港的獨特魅力。

 

It might not be the best of times, but gladly it’s also not the worst of times.

What are the similarities between New York and Hong Kong? They both are international financial centres, bristling with tall buildings, and they are cities that embrace all differences. We all will and have been through ups and downs. Fortunately, the dark times that Charles Dickens wrote about are long gone. Love and inclusion have solved the endless tragedies in London and Paris. And now in Hong Kong, the mixologists at St. Regis Bar evokes the tale of two cities, New York and Hong Kong with their creativity in mixing new cocktails.

 

 

悄然藏於 The Drawing Room 和 Astor 露台一旁的隱世殿堂St. Regis Bar洋溢紐約和香港昔日的經典情懷。北京藝術家張弓的手繪壁畫是酒吧備受矚目的焦點所在,描繪如舊灣仔及附近五光十色的街景、天星小輪和維多利亞港等香港標誌性特色,廣為人知的香港歷史、文化和自然元素亦盡在其中。

酒吧設計以豐富的暖色調為主,配合斜紋精紡及黃銅細線雕琢的細節,綴以青銅橡木嵌板及橄欖色皮革家具裝飾,讓客人倍感愜意親切,是晚間小酌及餐後消磨時光的理想之所。

 

Adjacent to The Drawing Room and Astor Terrace, The St. Regis Bar celebrates the feel of quintessential old New York City and classic Hong Kong. Featuring a customized handpainted mural that takes centre stage behind the bar by Beijing artist Zhang Gong, the art piece depicts Hong Kong’s rich history, cultural and natural sources, as well as local icons such as old Wan Chai and its colourful street scenes, the Hong Kong Star Ferry and Victoria Harbour.

Rich warm tones, tweeds and brass details along with bronze oak paneling and olive leather upholstery give the bar a cosy and welcoming atmosphere to enjoy evening drinks or an after-hour digestif.

 

 

14款招牌雞尾酒串起一部「雙城故事」,其靈感來自於 1904 年(即紐約St. Regis 酒店開業的同一年)同時面世的紐約地鐵和香港電車,每款雞尾酒都在敍述著相關目的地及當中的故事。酒吧亦提供經典版本的Bloody Mary和加入了本地食材如陳皮、五香粉及九龍醬園豉油調製而成的 Canto Mary,以及由本地釀酒廠Young Master 專為St. Regis Bar特製的雙城精釀啤酒 (Two Cities craft beer)。黑麥Lager啤酒亦是酒吧的招牌佳釀,以經典拉格啤酒為基礎,再加入黑麥麥芽,向香港標誌性的熟食店文化致敬。

 

The bar evokes a tale of two cities with New York’s subway and Hong Kong’s tram, both launched in 1904, also the same year the St. Regis New York was founded, providing the inspiration for 14 unique cocktails, each cocktail is inspired by its destination and its story. They also provide the classic Bloody Mary and a Hong Kong curated Canto Mary made with local ingredients such as dried tangerine peel, five spice and Kowloon soy sauce. The bar also serves the unique Two Cities craft beer that is customized for the St. Regis Hong Kong in partnership with local brewery Young Master. The signature brew, a rye lager, combines the old-school lager brewing tradition with the addition of rye malt as homage to the iconic delicatessen culture of the city.

位於灣仔南洋酒店的WAKO SAKE BAR,集逾百款日本直送的清酒、果酒、燒酎及獨家品牌,採用全自助暢飲形式,客人可在限時內任飲,深刻感受日本酒會的地道氣氛。酒櫃內的酒以顏色牌仔分類,橙色是清甜果酒、藍色代表吟釀、綠色則是燒酎。當中不少是獨家發售及代理,坊間少見,而且餐廳更會按季節不定期更新日本酒名單,可稱得上是一個日本酒寶藏。

Located in Wan Chai, WAKO SAKE BAR has over 100 Japanese sakes, fruit wines, shouchu and exclusive brands, which are designed to be consumed in self-service within a limited period of time. All sakes in the cabinet is sorted by colour labels. Orange is sweet fruit wine; blue is ginjo, and green is shouchu. Many of them are exclusive and rare, that you could hardly find them elsewhere. WAKO will also irregularly update the list of sakes. This place can definitely be called a sake treasure island.

 

 

店內還有知名唎酒師Randy Au坐鎮,他同樣大有來頭,是首位獲得Sake Service Institute(SSI)名譽唎酒師資格的香港人,為客人指點迷津,推介及講解店內各款清酒。除了奉送一小碟日本味噌供佐酒,你還可選擇多款小食,與友人邊吃邊喝。日本酒與食物的搭配并不似葡萄酒與西餐那般講究,因此你盡可開懷大試,找到自己最心水的搭配。

WAKO also earns a fame for their famous sake sommelier, Randy Au, who was the first to obtain Sake Service Institute (SSI) honorary sake sommelier qualification in Hong Kong, guiding the guests, introducing and explaining the sakes to you. In addition to a free small plate of miso, you can choose from a variety of snacks to pair your drinks. The pairing of Japanese sake and food is not as sophisticated as wines and western food. Therefore, you can just explore your favourite pairing from over 100 choices.

對於手工啤酒的種類而言,宏觀上,可分為兩大類:Lager及Ale,而其他為人所認識的啤酒種類如IPA、Stout、Porter、Pilsner等等,其實是Lager及Ale的分支;IPA、Stout、Porter屬Ale類別,而Pilsner則屬於Lager的類別。Lager與Ale兩者於釀製的方法、過程、溫度、材料等方面都有不同。

尖東一向是愛飲愛食的都市男女覓食之地,帝苑酒店更是城中老饕們至愛,包括耳熟能詳的傳統羅馬式Sabatini意大利餐廳、四季菊日本餐廳及東來順。帝苑早前新開幕的J’s Bar走法式小餐館路線,正好開拓城中年輕男女新市場。

J’s Bar採用歐陸式設計,以深藍色作主調,更設有城中少見的男士及女士專區及酒窖(星期二men’s night及星期三ladies’ night),男女皆可暢所欲言。

 

J’s Bar雖然主打美酒如Ilsa lund和The colonels last laugh等cocktail,但其招牌歐陸式小食及日式串燒同樣出色。而且J’s Bar推出了新Bistro Dinner Menu,包括鵝肝及波士頓龍蝦等,正適合拍拖約會的年輕男女。

不妨於每日4pm至8pm的happy hour時段、9pm至凌晨1點的live band表演(星期三至六)前來。如果想狂歡一點,星期日至二晚的8點半至凌晨12點半更有DJ駐場打碟,適合好動活躍的你。

在酒吧享受之時,也許大家都曾對眼前的一杯雞尾酒有所疑惑—到底杯裡有著甚麼材料,還是調酒師施了些甚麼魔法,竟能令雞尾酒如斯獨特呢?

在7月13日,一場大師級雞尾酒研習班將在Fang Fang舉行。屆時酒吧經理Gagan Gurung將伙拍來自新加玻NATIVE的創辦人Vijay Mudaliar,以一系列狂野大膽及新奇的雞尾酒迷倒前來的賓客。

順帶一提,於2016年底才開業的NATIVE,已於上月最新公佈的亞洲最佳50酒吧(Asia’s 50 Best Bars)勇奪第20名,而Mudaliar本人亦剛於The Bar Awards Singapore 2017獲頒年度最佳調酒師,其創新的理念正與Gagan對於調酒的想法不謀而合,因此在班上我們將可看見兩位透過雞尾酒突出不同亞洲食材的味道及特質。

波爾多「大金鐘」與天龍軒聯手推出美酒佳餚盛宴

來自波爾多右岸的「大金鐘」Château Angélus,一直不乏捧場客,最近首嘗跟中菜食府合作,與二星米芝蓮中菜食府天龍軒攜手推出美酒佳餚盛宴。劉師傅的首本名菜配上以清新風格聞名的名釀,矜貴滋味,盡在不言中。

這頓盛宴的菜式包含餐廳多款著名小菜,除了「大金鐘」,亦另外包括一杯香檳和白酒。前菜先有雞汁燉鮮鮑、蜜燒西班牙黑豚肉叉燒和魚子醬白露筍,配一杯Lallier Grand Cru Grande Reserve NV香檳,馬上令人胃口大開。緊接青蔥爆龍蝦搭Domaine Corinne and Jean-Pierre Grossot Chablis 1er Cru Les Fourneaux 2014,薑絲和蔥蓉跟清新的Chablis美妙地融合起來,是意想不到的組合。

來到戲肉,這次餐廳侍酒師別出心裁,想出以同一道黑椒松茸煎牛柳跟兩款大金鐘酒莊的年份佳釀搭配,食客可感受兩款風格各異的配搭:No. 3 d’Angelus Saint-Émilion Grand Cru 2008彌漫著優雅而清淡的薄荷醇和香料氣味,與菜餚中的黑椒香味非常匹配,而酒中香醇細滑的丹寧更為菜式帶來一縷清新。Le Carillon d’Angélus, Saint-Émilion Grand Cru 2012的顏色呈深石榴紅,黑果香氣撲鼻而來,以此濃郁佳釀中的丹寧乳化牛柳的脂肪部分,可令菜式的張力和氣味更為豐富。想再多嚐同酒莊另一款美酒,還另可升級配搭一杯Château Angélus, 1er Grand Cru Classé A, 2014,此酒在丹寧、張力和清新度皆有極佳平衡,而當中50%的Cabernet Franc和50%的Merlot令丹寧味道更為複雜且餘韻持久。

最後吃過長腳蟹肉炒糯米飯和甜品,滿足之情溢於表。這頓米芝蓮盛宴限定由7月1日至9月30日供應,六道菜晚餐每位HK$2,888(兩位起),另加可HK$680配搭一杯Château Angélus, 1er Grand Cru Classé A, 2014。
